Slide 14 of the "Addressing Common Oracle E-Business Suite Performance Issues with Workflow – Part 2 of 2" presentation lists the 26 tables that are purged by the “Purge Obsolete Workflow Runtime Data” program (FNDWFPR).
You can also examine the WF_PURGE and ECX_PURGE packages on  eTRM to see which conditions lead to which tables being purged.
